Prepared by vigorously churning curd (dahi) with water to separate the butterfat (which becomes ghee or butter) from the remaining liquid. This leftover liquid is mohi—a thin, slightly sour beverage that’s often flavored with salt, cumin, ginger, green chili, or fresh coriander, depending on the region or preference.
